DINERS at a restaurant in Somerset are helping to support Westcountry farmers, producers and suppliers with every mouthful they eat (July, 2018).

The River Parrett Restaurant has pledged to source ingredients only from the South West’s farming, smallholding and supplier community and can offer customers details of the provenance of the dishes it serves.

Owner of the Salmon Parade business, Mariusz Muskietorz, explained: “We are sourcing as many of our ingredients as nearby as possible and around 90% of all our suppliers are based within a 40-mile radius of the business.

“Our philosophy is to offer good food, found locally wherever possible, while supporting businesses in the community at the same time. While we can’t source more exotic things like citrus fruits in the area, we try to find as many of the other seasonal items that we use as possible.

“We source our meat from two local butchers, the award-winning Pyne’s of Somerset in North Petherton and Croft Farm Family Butchers in Cannington. All the meat we use is traceable right back to the farm it came from. You can’t get any fresher or tastier produce than that reared nearby.

“Our cheese selection comes from the Longman family. They work with all the local cheese suppliers in Somerset and have a large variety of cheeses, which are produced around our area. They have been farmhouse cheese makers in Somerset for more than 200 years.

“We also have a very close relationship with our suppliers, it’s a partnership and we rely on each other. We share good, old fashioned, traditional values when it comes to offering the very best to our customers.”

Mariusz has invested significantly in refurbishing The River Parrett Restaurant and along with Executive Chef, Michal Snela they have been developing a network of suppliers from the area.

“Our à la carte menu includes stunning, delicious dishes such as pan-fried duck breast, blackberry beetroot mousse, potato au gratin, baby carrot and smoked strawberry sauce and grilled octopus with squid ink citrus risotto and lobster mayo. There’s something for every palate.”

The River Parrett Restaurant menu is created from fresh, seasonal ingredients, sourced from nearby, on a daily basis by the team.

“We like to be creative with our dishes but always ensure they are bursting with flavours and imagination. We make everything we serve here in our kitchen at the restaurant and are dedicated to sourcing all the local or regional produce available to us. We’re so lucky here in the Westcountry, we have local farmers supplying the butchers we use with their beef, pork and lamb and the fishing communities providing us with the freshest catches each week too.”
